Hi Pro peanut butter collaboration!

The best part is having leftover
peanut butter for my bagels.
The good folks over at Hi-PRO Peanut Butter contacted me in October to try our their high protein peanut butter and develop a brand new recipe for their website.  I was definitely up for the challenge as I enjoy baking and eating peanut butter (not necessarily at the same time).  It was a win-win situation.

Hi-PRO tastes just like regular peanut butter and comes in smooth or crunchy.  During processing in the factory, additional peanut flour (which contains protein) is added to the peanut butter, which boasts 33% protein in every serving but no additional fat. This makes it an excellent post-workout snack.

When brainstorming ideas of what to make, I somehow thought of Elvis and how he was known for his fried peanut butter and banana sandwiches. I pitched it to Hi-PRO and they loved the idea.  Then I did some more research to find out his sandwiches also had bacon and grape jelly in them.  I started experimenting in the kitchen but was always going to leave out the grape jelly.  I figured the bacon would be challenging enough.


We used British bacon, but I think my American readers will find the thin slices in the good old USA will work much better.  You will have to try out my recipe and let me know what you think.  It is sweet and salty.  Add on some grape jelly (what the Brits call 'jam') and have all your taste buds firing.

Paleo-ish Brownies

Long-time readers know I have dabbled in #Whole30.  While a bit restrictive, I do start to feel much better about halfway though the cycle, which makes me want to continue the manageable habits as best I can.

The Protein Works recently sent over a bag of their Paleo Protein powder for me to try (They actually offered to send me any product I would like to try but there are so many it was really overwhelming so I only asked for the protein powder and Peanut Butter Luxe Choc Fudge Brownie, which is phenomenal on a sliced banana).  It is pink as raspberries and beetroot are some of the ingredients and lack sweeteners and flavouring.  Here is a full list of ingredients:

  • 100% Egg White Powder
  • Natural Raspberry Powder
  • Natural Banana Powder
  • Cold Milled Flaxseed
  • Cold Pressed Beetroot Juice Powder
  • Natural Mango Powder
  • Cold Pressed Carrot Juice Powder

I tried it one morning as a protein shake (made with milk) and found there to be a subtle taste of something, but I couldn't place it.  Of course, milk isn't paleo. I blame this poor decision on not yet having caffeine that day.

pan so they were easier to serve.
This week, I am having a bake sale for a RODS Racing fundraiser, so I thought I would try making a paleo brownie.  It isn't an exact copy of a brownie, but it is cake-like and chocolatey.  You do the best you can when adhering to paleo or #Whole30 as the long-term goal is more important than the short-term pleasure. I am also about balance so why the heck not?

Paleo-ish Brownies

Ingredients
22g ground almonds
60g Paleo protein
5 tablespoons of cocoa powder
2 medium eggs plus 1 yolk
75g melted butter
1/2 tsp baking soda
pinch salt
80 mls maple syrup

Directions
1. Preheat oven to 350 degrees F/175 degrees C.
2. Spray 8x8 inch square tin with non-stick spray.
3. Mix all ingredients together.
4. Pour into pan and spread evenly.
5.  Cook for 30 minutes or until a tooth pick comes out clean (will vary on size of pan and type of oven).
