Ingredients
3/4 cup minced fresh parsley
1 tablespoon minced fresh mint
1/2 Roma tomato, seeded and diced
1 tablespoon chopped green onion
1.5 teaspoons fresh lemon juice
1.5 teaspoons extra-virgin olive oil
1/8 teaspoon salt
Directions
1. Place all ingredients in a bowl and toss well.
2. Store in a sealed container in the refrigerator for up to 3 days.
